Depends on how many total calories you're eating, but I'd say low carb would be about 10-15carbs per meal towards the end of the day.
500calories? That would be about 2tbsp of peanut butter (or your choice of a nut butter, its around 210kCal per serving) and about 4oz of chicken or turkey.
That'd be, probably a total of about 50g protein, 16g fat, and about 4carbs.
YOu still want carbs after your workout!! And by carbs I mean sugar!! I'd take about 40-50g sugar after your workout if its intense enough of a workout.
I have been having about 2 - 3 tbsp of peanut butter as a meal/snack type thing, problem with me eating chicken or turkey is I'm vegetarian - so no meat at all. Haven't ate meat since I was 11 so that's about 7 years.

Thats cool your a vegetarian, I love Tofu myself, speaking of which I need to make some today, or at least let it drain and throw it in a marinade so it can soak overnight :P.
I'm skeptical about the protein quality of soy protein, but I'm sure there's a complement food protein that would go well with it.
The idea is called mutual supplementation which, being a vegetarian you probably already know, but I'll elaborate anyhow because I think its interesting :-p.
