Diet calculation help!!

Help! I'm completely cluelss!! I'm gonna pull my hair out. I know my diet has been holding me back from making the gains I want. Can anyone explain or point me towards a book or website that explains nutrition. 300 g of protien 200 g of carbs 100 g of fat, counting calories, etc. how do measure/calcualte this stuff?
I can't stand veggies. Corn and potatos are the only ones i like. How does someone like myself get a well balanced diet without them? I've been looking for cookbooks, diet plans. I can eat diced veggies like peas and carrots mixed with other things. I've heard about roasting veggies. I'm willing to try anything. Please help.

You NEED vegetables to have a well balanced diet. Theres no way around it. I mean you can supplement the vitamins but what about the fiber?
I think probably all you need to do is have a good pre-workout meal and a good post-workout meal...if you're having trouble gaining weight, this is the way to go. Don't stuff yourself though, just eat until you're JUST full.
Pre Workout I would recommend having one of the following:
Eggs
Chicken Breast
Pasta w/chicken
You can add a little bit of potatoes to these meals also
Post workout:
Drink a protein shake OR eat cold cut Turkey. With this, have some whole grain bread (tukey sandwich, anyone?) And a banana will do you good also. If you're into yogurt, you can also eat yogurt. But make sure you have the Shake or some EXTREMELY LOW FAT meat (like the Tukey) so eat as your primary source of protein.

It's free and easy to use... I made a lot of progress til the day i started to calculate how many calories i take and what kind of calories... As my mentor (Tom Venuto) says, you have to count the calories, if you don't, you won't be able to reach your full potential.

Well firstly, the four vegetables you just mentioned are the worst ones to eat.
Peas, Corn, Carrots, Potatoes. Stay away from those. Do you like sweet potatoes or yams? Yams are slightly better than sweet potatoes, but they're both very good for you.
How about broccoli or cauliflower? If you steam them they taste amazing! But if you eat them raw, well.. thats another story (I dont like them raw without some sort of dip).
If you dont get all the vitamins and minerals you need from your diet (which most of us dont) the next best thing is a high quality multivitamin.
I recommend the two-a-day time released ones. (You can purchase these from GNC). The one-a-day multivitamins are no good (like Centrum, or the one's you get from Sam's club).
